Ghost Boxes
Ghost boxes are made with chocolate Grillage Squares. Inside, they hide a velvety sea buckthorn cream that pairs perfectly with a layer of soft sea buckthorn sponge cake. The composition is finished with charming chocolate Ghosts and a Mummy decoration, making it the perfect dessert for Halloween.

Ghost Boxes Recipe
Sea buckthorn sponge cake
Whisk eggs with sugar until white foam is obtained. Add vegetable oil, milk and sea buckthorn paste. Then add food coloring, sifted flour and baking powder. Spread a thin layer of sponge cake mass on a tray lined with baking parchment. Bake at 160°C for 18 minutes. After baking, cut into desired shape.
Sea buckthorn cream
Soak gelatine in cold water. Boil cream(1) with sugar, add soaked gelatine, and then add mascarpone and sea buckthorn paste and stir until smooth. Combine with the cold cream(2) and put in the fridge to set. Whip the cream using a mixer on medium speed, before use.
Pineapple marmalade with sea buckthorn and cardamom
Boil the sea buckthorn, blend and strain. Add diced pineapple and pectin mixed with sugar. Boil for 5 minutes. Add the lemon juice and zest and finally the cardamom. Refrigerate for 12 hours.
