Exclusive practical masterclass

On 13–14 October 2026, at Acamedy of Skills Inspiration in Inowrocław will welcome Gregory Doyen, the French master pâtissier with over 20 years of international experience. The founder of GD Sweet Concept, he leads masterclasses and consultancy projects around the world, inspiring professionals to create contemporary, premium desserts.

Gregory Doyen is one of France’s most recognizable pastry chefs. Since 2014, he has delivered training in more than 50 countries, sharing his expertise with thousands of participants. He has collaborated with prestigious venues and brands including CoffeeMania, Atlantis The Palm and Artelice Patisserie, and has also created desserts for Cartier, Dior, Chanel, Louis Vuitton, Hermès and Vogue.

His style brings together French pâtisserie craftsmanship with a sensitivity to design, luxury and detail. Gregory Doyen’s desserts are distinguished by their elegant forms, precise execution and refined combinations of flavours and textures.

The ‘Elegant Pastry’ masterclass has been designed for professionals who want to develop their offer with contemporary individual entremets, tarts and roulades, while raising the standard of dessert presentation in patisseries, cafés, restaurants and dessert studios.

Contemporary pâtisserie in Gregory Doyen’s signature style

During the masterclass, participants will learn the working techniques Gregory Doyen uses in his international masterclasses and consultancy projects. The programme includes working from developed recipes, composing flavours and textures, artistically finishing desserts with creams, decorating with Barbara Decor chocolate decorations, and a range of approaches to the styling and display of desserts.

This is a hands-on masterclass: participants will work with the recipes, techniques and products covered in the programme, preparing the individual components under the guidance of the chef and the Inspiracja Skills Academy team.

Eight exceptional recipes

During the masterclass, participants will prepare eight elegant creations:

  • the ‘Cadeau’ individual dessert,
  • a strawberry chocolate roulll,
  • a chestnut tart,
  • a contemporary interpretation of Black Forest,
  • the Equinox individual dessert,
  • the Coffee Crown tart,
  • the ‘Tree’ individual dessert,
  • a lemon tart.

Each dessert offers an opportunity to refine precision, discover new technical approaches and explore compositions that can enrich a professional pâtisserie offering.

Knowledge, practice and inspiration

The masterclass is aimed at pastry chefs, pâtissiers, owners of patisseries, cafés and restaurants, and HoReCa professionals who want to create contemporary premium desserts and set their offer apart in the market.

A small group will ensure a comfortable working environment, active participation in preparing the recipes, and direct exchange with the chef. The masterclass will be conducted in English, with Polish interpretation provided, so every participant can benefit fully from the chef’s knowledge and experience.

The programme includes team work, a presentation of the finished desserts, tasting, and a shared dinner with Gregory Doyen on the first day of the masterclass. It is a rare opportunity to speak with a master, exchange experience and find inspiration in a more informal setting.

Participants will receive printed recipes, an apron and a certificate of completion. The organiser provides fully equipped workstations, high-quality ingredients, coffee breaks, lunches, dinner on the first day of the masterclass, and accommodation according to the selected package.
