VALENTINES HEARTS Recipe

RASPBERRY SHORT PASTRY

Ingredients:
400 gPlain flour
100 gFreeze dried raspberry powder
120 gYolks
100 gIcing sugar
300 gButter
Red colorant
Preparation:

Mix all ingredients together until homogeneous texture. Roll out to a thickness of about 0.5 cm, cut out a round shape. Bake in a silicone mould at 160°C for 12 - 15 minutes

RASPBERRY HIBISCUS JELLY

Ingredients:
500 gRaspberry puree
20 gConcentrated hibiscus paste
5 gAgar
Preparation:

Combine all ingredients and bring to a boil. Leave to set, then mix with hand blender. Put into a silicone mould and freeze.

CHEESECAKE MOUSSE

Ingredients:
315 gMascarpone
315 gCottage cheese 4-6% fat
400 gSweetened condensed milk
70 gConcentrated rum paste
18 gGelatine
56 gWater
400 gCream 32% fat
Preparation:

Combine all ingredients and bring to a boil. Leave to set, then mix with hand blender. Put into a silicone mould and freeze.
